A Burgundy Paulée
with the Albany Chapter of the Chevaliers du Tastevin,
at Chez Mike, East Greenbush, NY (9/10/2023)



This was a Paulée of the Albany-Capital Region chapter of La Confrérie des Chevaliers du Tastevin. Thus, everyone brought their own wines, nominally one bottle per person. The host for this dinner was John Fritze.

Since this was a Paulée, there were no organized flights. I've grouped the wines in relation to the food courses. As far as I know, all the wines were pop and pour.

The Venue

Chez Mike has a very unassuming exterior in a strip mall on NY Route 4 (Columbia Turnpike) in East Greenbush, NY.
But don't let that fool you. The food here is top notch.

The Whites

Salmon Rillette with Cucumber Dill Salad.

Seared Scallops with Melon Quinoa "Tabbouleh", Vanilla Sauce, and Pink Peppercorn.

The Reds

Chicken Thigh Coq Au Vin with Mushroom, Cippolini, Bacon, and Gruyere Noodle Kugel

Roasted Veal Loin with Truffle, Corn Succotash, Sweet Potato, Thyme Veal Jus.

Nettle Meadow Farm Kunik Cheese with Roasted Plums, Walnuts, Honey Drizzle.

Dessert

Triple Chocolate Tart with Whipped Cream.

Recognizing the Chef/Owner and His Staff
